A play on words from the aria of “The Barber of Seville”. “All’idea di quel metallo” [at the thought of that mighty metal]… in that case the metal referred to was gold, a great source of inspiration and motivation for Figaro.

CURIOSITY

Rossini not only had a gourmet palate, but he was also quite prepared to experiment with the most “satisfying” and bizarre combinations, and this has led to Sugo Rosso. We have developed one of the historic Rossini sauces, with top quality prosciutto, mixed woodland dried mushrooms, spices, a bouquet garni, tomato, and black truffle.

The preparation itself also makes this dish rather “daring”, as the Maestro would boil the pasta in chicken broth, with orange peel and a little cream.
