We chose this classic mortadella because it complies with all the characteristics we were looking for, and which the composer expected and demanded from an excellent salami. In this small mortadella, only genuine and natural ingredients are used, hand crafted as it was in his time. The cuts of meat used, (shoulder and cheek), only come from Italian porks. The seasoning is with natural spices such as: salt, garlic, pepper, macis, cardamom, nutmeg, cloves. The casing is exclusively a natural pork bladder and cooked in brick ovens according to tradition.
